The weight of the live animal. It can be influenced strongly by stomach fill and hydration level. Two animals that yield the exact same amount of meat could have live weights that are different by 100 lbs or more (that would be a hundreds of dollars difference to you the buyer). This is why we charge by hanging weight when selling freezer beef.
Hanging weight is typically 750–850 lbs for our animals. That means you should expect to pay $1200-$1400 for a quarter. Although this is a chunk of change upfront, remember that this is wholesale pricing, and much cheaper than you would pay at the grocery store for the same grade product.

This is the weight of the cuts you actually take home. It is typically around 60% of hanging weight due to bones and fat that are removed when breaking the hanging carcass down into individual cuts (you can order the fat for suet, tallow etc. and some bones for your dog or soup if you like). How you want your portion cut can significantly change this number. For instance, New York Strips and Filets are the 2 sides of a t-bone steak, but a t-bone will be significantly heavier due to the bone. This is why we do not charge by the weight of actual cuts.
Expect to take home roughly 110–140 lbs of cuts if you order a quarter. This works out to a very rough price of around $10/lb of actual cuts you take home. While this might be more than you pay at the grocery store per pound of hamburger, remember you are also getting premium steak and roasts for the same price/lb.

The butcher shop will have a standard cut sheet with all the information on to process your animal. We will help you figure out the best types of cuts, thickness of your steaks, sizes of your roasts, etc.

Yes, we require new customers to place down payments to reserve an animal. We typically ask $100 for a quarter, $200 for a half, and $300 for a whole.

All fees are wrapped into our price per pound. There are no additional fees for the butcher.

The down payment will be due at the time you place an order. Once the animal is at the butcher, we will know the hanging weight and provide a total invoice. This invoice must be payed in full before picking up your order. In addition to cash or check, we accept Venmo and Paypal.

We usually don’t deliver. Most orders should be picked up directly at the butcher shop. We will call you when it is ready. Sometimes, we may be able to meet you in Morgantown or Uniontown. This will depend on our availability and the size of your order. While we will try to be flexible we do not guarantee the ability to meet you.
