Our herd is made up of animals of a variety of ages, and we have cattle that are finished throughout the year. However, it is a good idea to reach out 6 months in advance (or more) to schedule your animal. We sell quarters, halves, and whole animals, which are priced based on hanging weight. Hanging weight is the weight of the animal after harvest, once the hide, head, organs, and hooves are removed, but before the meat is cut and packaged. Your final take-home weight will be less than the hanging weight due to trimming, deboning, and cutting preferences.

All customers complete a custom cut sheet, which allows you to choose how your beef is processed—such as steak thickness, roast sizes, ground beef packaging, and specialty cuts. If this is your first time purchasing beef, we are happy to walk you through the cut sheet step-by-step and help you make selections that best fit your cooking style and freezer space.

Once your animal is taken to the butcher, it is typically dry-aged for 10–14 days and then cut, wrapped, and frozen. Most orders are ready for pickup approximately 3 weeks after harvest, depending on butcher scheduling.

We are located in Gibbon Glade, PA, right on the PA/WV border. We are approximately 30 minutes from Morgantown, 25 minutes from Uniontown, and 1 hour from the Pittsburgh area. We typically request that finished beef be picked up from the butcher, but we may be able to work out delivery depending on your location and the amount you purchased.
